Ingredients:
For the dough:
2 cups of Banaplus green banana flour
1/2 cup of cold butter (cubed)
2 tablespoons of sugar
A pinch of salt
1 egg
2-3 tablespoons of cold water
For the filling:
6 apples (Granny Smith or your preferred variety)
1/2 cup of brown sugar
2 tablespoons of Banaplus green banana flour
1 teaspoon of ground cinnamon
1/4 teaspoon of nutmeg
Juice of 1 lemon
1 teaspoon of vanilla extract
1 tablespoon of butter
Preparation:
Prepare the dough:
In a large bowl, mix the green banana flour, sugar, and a pinch of salt.
Add the cold butter cubes and mix with your hands or a pastry cutter until you achieve a sandy texture.
Add the egg and mix well. If the dough is too dry, add cold water, one tablespoon at a time, until it forms a compact dough.
Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the filling:
Peel, core, and slice the apples thinly.
In a bowl, mix the apples with the brown sugar, green banana flour, cinnamon, nutmeg, lemon juice, and vanilla extract.
Let the mixture sit for 10 minutes to allow the apples to release their juices.
Assemble the pie:
Preheat the oven to 180°C (350°F).
Remove the dough from the refrigerator and divide it into two parts. Roll out one half into a circle large enough to cover the bottom of a pie pan.
Place the rolled dough into the pan, gently pressing the edges.
Add the apple filling and place small pieces of butter on top.
Roll out the second half of the dough and cover the pie. You can create a decorative design or cut it into strips to make a lattice.
Seal the edges and make small cuts on top to allow steam to escape.
Bake:
Bake for 45-50 minutes, or until the crust is golden and the filling is bubbling.
Remove from the oven and let it cool before serving.
